Last weekend I had brunch with a girlfriend and ate some of the best buttermilk pancakes I’ve ever had. Which got me thinking about pancakes and how I really don’t eat them as often as I should. Those nice, light, fluffy flapjacks can really just make your day.
Well someone at Clinton Street Baking Company must have read my mind because the entire month of February is Pancake Month at the Lower East Side eatery, voted “Best Pancakes” by New York Magazine.
Every few days a new flavor debuts, starting on February 2nd with candied blood orange and bittersweet chocolate. The month continues to offer days filled with crunchy banana with a cinnamon-chili-chocolate sauce and ends with fresh coconut pancakes with roasted pineapple and macadamia nuts.
I’m going to leave you on that note, as I’ve now managed to salivate all over my keyboard. I can’t wait to find the sticky spot on my arm from syrup and wonder how it got there…
