“This is freakin’ good bacon!” I imagined one old friend, using his favorite adjective, saying when I served up a breakfast plate with Boss Hog Hickory Smoked Bacon from the good people at BaconFreak.com.

This succulent and flavorful gourmet bacon, cured with brown sugar, can be found at a website that features an incredible array of bacon products. Among the 20 varieties of specialty bacons for sale is Rocco’s Private Reserve No Nitrite Bacon, which contains no preservatives of any kind. Another hickory-smoked favorite, Bourbon Street Cajun Style Bacon, reminded me of the spontaneous musicality in the streets of New Orleans during Jazz Fest there years ago. The inspiration for another of the treats at BaconFreak.com seems to have come from the North; Uncle Sam’s Cottage Style Bacon, a product that claims its own form of Canadian Bacon for the USA. Bacon Freak takes great pride in the high quality of its small production, artisan-style specialty bacons and has carved a growing niche by offering bacon products as gifts. I can’t wait to try out some of the others but for now I am content to enjoy some of the best-damned country style bacon that I’ve ever tasted.
